The documentation was wrong. It will be fixed in the next release.
As for the Map question, I do not follow - Database Update (and Database Query) are not explicitly mapped to a concrete Database Record - you can pass any string as the <SQL Statement>, containing any schema elements and it should work as long as syntax is correct.
Perhaps it would help if you model a (non working) example to illustrate your question, and post a screenshot here.
