The studio version with which an application was created/updated is not stored in the application itself, so obviously there's no way to enforce deployment using the same version, although it is a good idea, in order to avoid unexpected behavior in deployment, arising from changes in server implementation.
When we do change implementation of a plugin/template, we aim to maintain backwards compatibility (by specifying/incrementing the pluginVersion property), unless the change is a bug-fix. So deploying an application to a newer server version, while not recommended, should work as expected in most cases.
